Combine flour, yeast, salt, olive oil, and the water in a large bowl.
Mix until all the flour is absorbed and you have a soft dough that is just the tiniest bit sticky.
If you have a KitchenAid mixer, mix dough with dough hook for 4 minutes then knead for 3 minutes until dough is slightly stretchy.If you don't have a mixer, knead for a good 6 minutes. Let dough rest 1 hour.
Mix the chopped and de-stemmed herbs, then divide dough in half. Form into two disks and let rest 30 minutes on a baking sheet that has been lined with parchment.
Preheat oven to 425° F.
Bake 30 minutes, or until brown and sounds hollow when tapped.
