About this bread

Herb Bread with Basil and Cilantro is made with fresh herbs and tastes delicious. It tastes lovely with tomatoes and a good cheddar cheese. The original recipe uses basil, cilantro, and dill, but I stuck with basil and cilantro which complement each other, because I had them available and I didn’t feel like running out to the market. Use oregano, dill, rosemary, or a combination if you are adventurous and love those flavors.

This recipe is adapted from Paul Hollywood’s 100 Great Breads and it’s very easy to make. Here are a few more very easy bread recipes:

 

Herb bread with basil and cilantro

Herb Bread with Basil and Cilantro is made with fresh herbs and tastes delicious. It's lovely with tomatoes and a good cheddar cheese.

Ingredients
  

  • 4 cups white flour Use bread flour if you have it. Mine was made with plain white flour
  • teaspoons instant yeast
  • 2 teaspoons salt
  • cup olive oil
  • 1 ounce fresh basil
  • 1 ounce cilantro
  • cups water

Instructions
 

  • Combine flour, yeast, salt, olive oil, and the water in a large bowl.
  • Mix until all the flour is absorbed and you have a soft dough that is just the tiniest bit sticky.
  • If you have a KitchenAid mixer, mix dough with dough hook for 4 minutes then knead for 3 minutes until dough is slightly stretchy.
    If you don't have a mixer, knead for a good 6 minutes.
  • Let dough rest 1 hour.
  • Mix the chopped and de-stemmed herbs, then divide dough in half. Form into two disks and let rest 30 minutes on a baking sheet that has been lined with parchment.
  • Preheat oven to 425° F.
  • Bake 30 minutes, or until brown and sounds hollow when tapped.
