2teaspoonsbaking soda
1½cupsboiling water
Step 2 - Mix the batter
1sticksoftened butter
1½cupsugar
1egg
1teaspoonvanilla
drained water from the soaking dates
2¾cupsflour
1/2teaspoonsalt
1cupcoarsely chopped walnutsYou can use other nuts such as pecans, hazelnuts, etc.
Instructions
Add the baking soda to the boiling water and pour over chopped dates. Let sit until cool but DO NOT discard.
Cream butter and sugar. Add egg and vanilla, then add the water strained from the dates.
Add the flour and salt, and mix well.
Gently mix in the dates and nuts. Pour into 5 grease and floured mini bread tins.
Bake at 350°F. for approximately 30 minutes. If you are using two regular-sized bread pans, it will take about 50-60 minutes to bake. The internal temperature should reach 190° F. and there should be little to no wobble when you move the pans. See note below*

*The toothpick test may be misleading due to the dates and moistness of the loaf.
