My recipe for the best banana bread makes a moist and delicious loaf, studded with walnuts and loaded with flavor. I serve it with a yummy browned butter spread that isn’t too sweet but kicks up the flavor.

There are about a million recipes for banana bread out there and most are decent. However, I think this one is easy, inexpensive, and better than all the more complicated recipes I’ve tried (and I think I’d tried them all!). I’ve also included a few tips for making a moister, and more delicious loaf. If you really want to really kick it up a notch, add the browned butter spread. I could eat this stuff by the spoonfuls.

For best results, follow these tips:
  • Don’t use less than 3 very ripe bananas. Less that 3 won’t give you a enough banana flavor
  • Chill the bananas before baking. They whip up better, giving you a fluffier more delicious loaf
  • If possible, use mini loaf pans. They bake faster and more evenly. By the time the regular pans cook the middle, the outside part of the loaf is often over baked.

Ingredients
  

  • 3 bananas mashed with a fork (or beaten in with a mixer)
  • 1/3 cup butter, melted
  • 1 large egg
  • cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup walnuts, coarsely chopped

Instructions
 

  • Preheat oven to 350°F. Grease or spray 4 mini bread pans, or 1 4x8 inch loaf pan.
  • Combined the mashed bananas with melted butter in a large bowl. Beat until fluffy.
  • Add egg and sugar. Mix well.
  • Stir in all remaining ingredients and mix just until thoroughly combined. Fold in nuts.
  • Divide the mixture into 4 mini pans or 1 loaf pan. If you are making mini loaves, they will bake in about 20-25 minutes; larger loaf will bake in about 60 minutes. You will know it's baked when a wooden skewer inserted in the middle comes out with just a few moist crumbs.
